Breakfast on the go

Tired of the same old bran muffin every day of the work week? Are you craving a high-protein meal that will boost your energy throughout the morning?

Or, big question: do you not even know how to cook?

Simplest solution in the world: egg in a pita. It's easy, it's portable and it's on the go.

Prep and serve time:10 minutes

2 eggs beaten with 1 Tbs. of water or milk

1-2 oz. grated cheddar cheese

1 Tbs. chopped scallion

1 whole pita

salt and pepper to taste

     

Heat frying pan on medium heat. Add a bit of margarine and let it melt. Add scallion and let it cook for 1 minute. Add egg and scramble until egg is done. While the egg is cooking, cut 1" off the top of a pita bread and place in toaster and toast until warm. When the pita is done toasting, open up end and add cheese. Top with egg and salt and pepper. Wrap in a paper towel and you're out the door to catch Muni.

This recipe can even be done in the microwave at work. Just bring all of your ingredients with you. Nuke scrambled egg at 30-45 second intervals until done so it doesn't overcook.

Tips & techniques: When you cut the top off the pita, insert knife into pocket to separate layers before toasting. Grate cheese and chop onion the night before.

For lower calories: use Egg Beaters and mozzarella cheese
